Em's doctor went out of town until the 4th, WITHOUT letting us know her test results. I'm assuming they weren't all in yet, but there were a couple that should have been back pretty quickly. So now we have a few weeks of waiting.
In the meantime, her tummy seems to be improving with the removal of gluten again. Her eyes are still quite purple and sunken, but it's been months of feeling cruddy, it'll take a while to recover!
I thought I'd share the different cold lunches I've made her for school.
Wednesday - none of us can seem to remember! It must not have been very good haha
Thursday - Almond crackers, pepperoni slices, cheese slices, carrots, applesauce, and strawberry pediasure
Friday - GF noodles mixed with chopped up pepperoni, grape tomatoes, and cheese chunks, clementine, yogurt (make sure it's GF!) GF chocolate chip cookies, and strawberry pediasure.
Snacks have been a lot of fruits and vegetables. Apples, clementines, dried cranberries and etc.
I was pretty psyched to find out that cocoa puffs has no gluten products in it. It says it "may contain wheat" but has no wheat products. It's also helpful that she's a huge fan of rice krispies (that now have a gluten free version) and rice chex. We're looking forward to trying out the GF Bisquick.
I have to say, it's A LOT easier to go gluten free now than it was 6 years ago. Partly because of the products available now, and partly because of her attitude. She is also older, tired of having a sick tummy, and much more understanding of her special diet.
